
Truffle Hunting Piedmont: Alba White Truffle Experience (2026)
The Alba white truffle (Tuber magnatum pico) is the rarest, most expensive ingredient in Italian cuisine. It grows wild in the oak and hazelnut forests of the Langhe and Roero hills of Piedmont, cannot be cultivated, and is hunted by local trifolau (truffle hunters) with trained dogs. The season runs October through January with peak quality in November and early December when nights turn cold. The whole region orients around this six weeks of harvest.
When the season actually peaks
The Alba International White Truffle Fair runs from mid-October to late November (the 2026 edition runs October 10 to November 30). The Fair is the social and commercial heart of the season but the most aromatic truffles come later, in mid to late November after the first cold nights concentrate the flavor.
December and early January have smaller truffles but excellent quality and far fewer tourists. If you can travel between December 5 and January 10, you get late-season truffles, available restaurant tables, and quieter towns.

What a real truffle hunt looks like
You meet the trifolau at dawn or early morning. He brings two dogs (usually Lagotto Romagnolo, the Italian water dog bred specifically for truffles). The hunt takes 90 minutes to 2 hours in oak and hazelnut woods. The dogs work the ground, scratch at promising spots, the hunter digs carefully with a small hooked tool, and any truffle found goes into your basket. Hunters work specific patches they have known for decades.
Most luxury experiences include the hunt plus lunch with the truffle. A typical lunch is tajarin pasta with butter and shaved truffle, fried egg with truffle, a meat course, and aged cheeses. Pricing for the half-day experience runs 350 to 700 EUR per person depending on lunch elaboration.
Buying truffles to take home
The Alba Fair sells truffles by the gram. Prices in 2026 range roughly 3 to 6 EUR per gram for retail-quality specimens, more for large or perfectly formed ones. A 30-gram truffle (small dinner for four) runs 90 to 180 EUR. A 100-gram showpiece runs 300 to 600 EUR.
Transport home: truffles keep three to five days fresh in a paper bag in the fridge. They can travel in hand luggage. EU travelers face no restrictions; US travelers must declare at customs (allowed under personal-quantity rules).
